Come here for hand-rolled pastries and coffee that doesn't taste like it came from a tourist trap. Fan's does the fundamentals right: laminated croissants with actual butter, espresso drinks pulled with discipline, and a small rotating selection of cakes that change with the season. You're paying for technique, not hype, which means you'll actually taste what you're eating instead of sugar and air.

The breakfast sandwiches hold up surprisingly well for a casual spot. Order the ham and cheese on a croissant if you want something you can eat while walking to Cascade Falls, or grab a slice of their lemon cake with an Americano if you're settling in at one of their few tables. Their Instagram shows what's fresh that day, so check it before you go. The coffee here is strong enough that you don't need to order it as a large.

Arrive before 10 a.m. if you want a full selection. By mid-morning in July and August, the popular items sell out fast. The space is cramped and counter-service only, so this isn't where you linger for an hour. Skip this if you want to sit down with a cappuccino and watch people. Come if you want good coffee and pastry without the Banff markup.
