Nourish on Bear Street makes the strongest case in Banff that plant-based cooking does not require compromise. The menu changes with the season and the kitchen approaches vegetables, grains, and legumes with the same creativity and technique that meat-focused restaurants reserve for their proteins.
The plating is deliberate and the flavours read as complete rather than as something missing its centrepiece. The raw dishes are particularly well-executed. The tempeh bowl and the seasonal grain salads have the kind of depth that rewards eating slowly rather than working through them.
The room is warm and the clientele skews toward hikers, climbers, and anyone who has been eating heavy mountain food for a week and wants something lighter without sacrificing a proper meal. Reservations are recommended for dinner though the lunch lineup moves reasonably fast.
