PARK opened on Banff Ave in 2015 as the first craft distillery in the Canadian national parks and has not coasted on that distinction. The spirits program distills vodka, gin, and whisky on-site using glacial water and local grain, and the cocktail menu uses them intelligently rather than just listing them as modifiers.
The kitchen runs a wood-fired program built around live-fire cooking. Cast iron dishes, open-flame proteins, and a campfire-smoked brisket that takes an honest commitment to smoke seriously. The room is two levels with the distillery equipment visible from the dining floor. It reads as Banff without feeling like a tourist attraction, which is harder to pull off than it looks.
The best time to come is a weeknight in shoulder season when the Ave is quieter. Summer weekend waits are long. Reservations are recommended for dinner regardless of day. The house gin works in a way that house gins often do not, and the cocktails built around it are the strongest part of the drink list.
