The Bison on Bear Street has been one of the most consistent restaurants in Banff for years, which in a town with high turnover is a genuine achievement. The room is warm and deliberate, built around exposed timber and stone that fits the setting without performing it.
The menu sources Canadian proteins and produce with a focus on what makes sense in the Rockies. Alberta beef is the obvious anchor but the game dishes are where the kitchen distinguishes itself. The bison short rib braised low and slow is the benchmark dish. The wine list is long and selected with care.
The terrace upstairs is one of the better outdoor dining spots in Banff proper, though it fills fast on warm evenings. Reservations on the terrace are essential from June through September. If you eat one serious meal in Banff this is where to spend the money.
